Konmari for Carbs

Marie Kondo teaches us to hold our belongings in our hands, thank them for their service, and then decide whether we wish to bring them into the next phase of our life.  This week, I am applying this same approach to carbs.  After a month of research, reflection, and shopping, I have started a keto eating plan.

Thank you to the carbs I have eaten for the past 39 years.
Thank you to the cinnamon toast and hot cocoa that warmed me after school in the chilly winters.
Thank you to the 7-layer birthday cakes that made my day feel special.
Thank you to the family stuffing recipe, the buttered egg noodles, and all the other things that taste like Family.
Thank you to the carbs I needed because I was suffering from undiagnosed and untreated depression, from chronic pain, from unfulfilling relationships, from a stressful job, from difficult pregnancies.  Those situations are behind me now.
Thank you to the treats shared with friends, to the baked goods recipes I invented, to the quick boost from a tart or a danish or an afternoon tea & cookie.

I am ready to move into my next phase of life, in which I no longer need you, carbs.
